Arugula Protein Salad
Ingredients
4 cups arugula, washed and dried
1 cucumber, sliced
1 cup sweet corn, cooked and cooled (fresh, frozen, or canned)
2 kiwis, peeled and cubed
2 carrots, shredded or julienned
1 cup cooked beans (e.g., black beans, chickpeas, or kidney beans)
2 kiwi cubed.

Dressing
Ingredients
2 ripe avocado, peeled and pitted
1 cup plain Greek yogurt (or regular yogurt)
1/4 cup fresh mint leaves
2 clove garlic, minced
1 tablespoon lime or lemon juice
1 tablespoon honey
1 tablespoon olive oil
Salt and pepper to taste
Water (as needed for desired consistency).
