Today's recipe is for unbaked cupcakes made with strawberries and cream cheese.
If you cook the strawberries before combining them with cream cheese, you will end up with a beautiful pink cheesecake.

▷Ingredients (for 6 cupcakes):
80 g cookies
20 g unsalted butter

150 g strawberries
30 g sugar (use your favorite sugar)
1 tbsp lemon juice

200g cream cheese
15 g sugar
Strawberry purée
200 ml heavy cream
15 g sugar
30 g cold water
5 g powdered gelatin
9 strawberries

▷How to make:
1. Spread unsalted butter over finely crushed cookies and spread in cups.
2. Slice 9 strawberries into 4 equal pieces and stick them on the cups.
3. Put the cut strawberries, sugar and lemon juice in a saucepan over medium heat and cook until the strawberries are soft.
4. Separate 60 g of the strawberry purée.
5. Mix the room temperature cream cheese with the sugar until smooth. Add the strawberry purée and mix until smooth. 6.
6. Beat heavy cream with sugar until thickened.
7. Sprinkle gelatin powder over cold water to soften, then warm it in a hot water bath to dissolve the gelatin. Add to (6) and mix.
8. Pour the rare cheese mixture into the cups, smooth the surface, and refrigerate for 1 hour. Top with the reserved strawberry purée.
