I am making easy one-pot summer dish with eggplants, squash, potatoes, tomatoes and more. It is vegan, cooks on its own, no frying or sautéing required. You can serve warm or cold at room temperature.
Ingredients for the one-pot summer veggie dish:
2 of each onions, potatoes, eggplants, squash, tomatoes, sweet green peppers or bell pepper
couple of cloves of garlic
salt, black pepper
olive oil
1/4 cup water
