Makhana Ki Kheer Recipe

Ingredients:

1. Makhana (Lotus Seeds) - 1 cup

2. Milk - 4 small cups (Full cream recommended)

3. Cardamom powder - 1/2 tsp

4. Jaggery or Date paste - 1/4 cup (adjust to taste)

5. Chopped dry fruits (Almonds, Cashews, Raisins) - 1/4 cup

6. Ghee - 1 tsp (optional, can skip for oil-free)

7. Saffron strands - a few (optional)

Instructions:-

1. Roast the Makhana: In a pan, dry roast the makhana on low heat until they turn crisp. Crush half of them coarsely and keep the rest whole.


2. Boil Milk: In another pot, bring the milk to a boil and let it simmer until slightly thickened.

3. Add Makhana: Add the roasted makhanas to the milk and cook on low heat for 10-15 minutes until they soften.

4. Sweeten: Add the jaggery or date paste and mix well. (Note: If using jaggery, cool the kheer slightly before adding to avoid curdling.)

5. Enhance Flavor: Add cardamom powder and chopped dry fruits. Let it simmer for 5 more minutes.

6. Serve: Garnish with saffron strands and more dry fruits. Serve warm or chilled.

3. Chopped Curry leaves - 10-12 leaves
4. Black pepper powder - 1/2 tsp
5. Sendha namak (Rock salt) - as per taste
6. Red chili powder - 1/4 tsp (optional)
7. Lemon juice - 1 tbsp
8. Chaat masala - 1/2 tsp
9. Oil or Ghee - 1 tsp (optional, skip for oil-free)

Instructions:

1. Roast Makhana: Dry roast the makhana in a pan on low heat until they become crunchy. Keep stirring to avoid burning.

2. Add Flavors: In a separate pan, add oil/ghee (if using), and sauté curry leaves until crispy. Then, add roasted peanuts and mix well.

3. Mix with Makhana: Add the roasted makhanas to the peanut mixture.

4. Seasoning: Sprinkle sendha namak, black pepper, red chili powder, and chaat masala. Toss everything well to coat.

5. Final Touch: Turn off the heat and squeeze lemon juice over the mixture. Mix well.

6. Serve: Let it cool and store in an airtight container, or serve immediately as a healthy snack.
