A new cooking video! Thanks for following the crazy lady ..lol. We made a real German dinner today and it was SO good! I made this first...German Potato Salad. We will get Pork Schnitzel ( yes...Schnitzel...lol..got it!) up tomorrow! What an amazing food day!

GERMAN POTATO SALAD

3 cups red potatoes, peel and cubed into 1 inch cubes.
6 slices thick sliced bacon, fried and chopped, and divided. Reserve fat.
1 small onion, chopped
2 Tablespoons water
1/4 cup white vinegar
3 Tablespoons granulated sugar
1 teaspoon Dijon mustard
1 teaspoon salt
1/2 teaspoon pepper
1 Tablespoon fresh chopped parsley

Lets Make It-

To a medium saucepan, cover the potatoes with water. Bring to a boil, low heat to medium and cook until just fork tender. About 10 minutes. Drain and set aside, covered.

Heat the bacon drippings to medium heat, add onion. Sauté for 3 minutes. Add water, vinegar, sugar, Dijon, salt and pepper. Stir to combine. Add half of the bacon. Stir and let cook for about 5 minutes, or until mixture is reduce and slightly syrupy. Add the potatoes, the remaining bacon and parsley. Toss to combine. Serve warm. Enjoy!
