For the starter dough:

40 g of fresh yeast - 18 g if it is instant
100 ml. warm fresh milk - 36•C
1 1/2 tbsp. sugar
1 tbsp. flour

For the basic dough:

1 kg of flour - type 500
1 egg
300 ml of water
3 tbsp. yoghurt
1/2 tsp. bicarbonate of soda
2 tbsp. oil
1 tbsp. salt

For Butter Topping:

125 g of butter
1 tbsp. flour
1 tsp salt
