A quick tutorial on how to make Menorcan Oliaigua soup as taught to me by Peter's chef 25 years ago. Here I make it in my apartment kitchen. You will need:
3 large tomato halved & sliced
1 large onion sliced & halved
1 large red pepper sliced
4 cloves garlic sliced & chopped
1 chicken stock cube ( or veggi cube )
1/2 teaspoon sugar
2" tomoto purée
1 teaspoons sea salt or 2 if its hot weather
Sprinkle pepper to taste
Gulg or three olive oil
One large cup water add another cup later if needed
Boil and stir, boil for at least 1/2 hour
Simmer 2 hrs min
For the best results reboil the next day and eat.
