Overnight Cranberry and Cream Cheese French Toast Casserole
INGREDIENTS
12 c cubed day old bread
1/3 c light brown sugar
3 c heavy cream
1 tsp fresh orange zest
1 ½ Tbsp vanilla extract
8 large eggs
2 c LCQ’s Cranberry Sauce-see recipe

Cream Cheese Mix
8 oz cream cheese, softened
½ c powdered sugar
1 tsp orange extract

Cranberry Sauce
12 oz fresh cranberries
1 c granulated sugar
1 c orange juice

Cranberry Sauce Method
1. Preheat a medium sauce pan on medium heat.
2. Stir in the cranberries and cook until they start to pop, about 10 minutes.
3. Remove from heat and place sauce in a bowl. It will thicken as it cools.

METHOD
1. Preheat oven to 350 degrees.
2. Spray a 8 by 8 inch baking dish with nonstick cooking spray.
3. In a large bowl, whisk together the eggs, heavy cream, brown sugar, orange extract, and vanilla extract.
4. Add bread to egg/custard mixture and press on the bread to submerge.
5. Whisk the remaining orange extract and powdered sugar into the softened cream cheese.
6. Add 1/3 of the bread and custard mixture to the bottom of the casserole dish.
7. Next add ½ of the cream cheese and cranberry sauce on top of the bread. Repeat this process twice. Finally, add the last 1/3 of the bread and custard mixture.
8. Wrap tightly with plastic wrap and store in the refrigerator for up to 24 hours.
9. To bake, preheat oven to 350 degrees.. Spray the inside of aluminum foil with non-stick spray and place the casserole on a large rimmed baking sheet and bake for 25-30 minutes. Uncover and allow to finish baking for 5-10 minutes or until golden!


Gingerbread Martini
INGREDIENTS
2 oz baileys
1.5 oz vodka
1.5 oz gingerbread syrup
1/2 oz vanilla extract
2 oz heavy cream

METHOD
Add all ingredients to a cocktail shaker, then add ice and shake until chilled.
Strain into a martini glass. Top with whip cream, and enjoy!

Gingerbread Syrup
INGREDIENTS
1/2 cup water
1/2 cup dark brown sugar
2 Tbsp molasses
1 tsp ground ginger
1/2 tsp ground cinnamon
1/8 tsp ground cloves

METHOD
Add all ingredients to a small sauce pan on medium heat. Bring to a boil, and then reduce to a simmer, stirring occasionally.
Once all ingredients are incorporated, cool and enjoy! Refrigerator leftovers for up to one week.
