Ingredients
600 g beef
2 liters of water (10 cups)
300 g radish
3 tablespoons rice wine
1/2 tablespoon salt

Spice ingredients) 5~6 garlic, 1 green onion (15cm), 1/2 onion, 2 bay leaves, 1 teaspoon whole peppercorns

Leek salad) 50g leek, 1/2 onion (large), 1/2 bag enoki mushroom (70g), 1/4 redbellpepper, 1/4 yellow bellpepper

Mustard sauce) 2 teaspoon soft mustard, 1 tablespoon soy sauce, 1/2 tablespoon minced garlic, 1 1/2 tablespoon vinegar, 1 tablespoon raw sugar

Preparation)
1. Soak the beef shanks in water for about 30 minutes to remove the blood, and then tie them tightly with a cooking tie
2. Cut the radish into 3cm thick slices, cut into 3 pieces, and crush the garlic
3. Put water in a pot, add the spices, daikon radish, rice wine, and salt. After a short boil, add the beef shanks and cook for another 40 minutes over medium heat
4. Drain the meat, cut it into thin slices, and strain the broth through a cotton cloth and use it as the broth
5. Cut the leeks into 4cm lengths and cut the enoki mushrooms in half. Chop the onion, rinse it in water and drain it. Slice the bell peppers
