Learn how to spatchcock and do a quick chicken roast dinner that comes together in less than 90 minutes! The chicken is roasted with jarred, pantry ingredients like artichoke hearts, pickled peppers, olives and capers. They all get cooked underneath the chicken, creating an amazing pan sauce that is then topped with fresh parsley. It's saucy and salty and pickled and, more importantly, easy to make.
I'll also guide you on how to spatchcock a chicken, which means removing the spine of the bird, flattening it and thus making it way easier and quicker to cook. It roasts evenly and you're left with the most juicy, perfectly roasted bird.
