Today I made a rich Italian pudding cake with mascarpone cheese.
Coffee flavored pudding and a moist sponge that absorbs the caramel are a perfect match☺.
Mix the mascarpone cheese and sugar until thoroughly blended before adding the eggs to create a melt-in-your-mouth pudding.

▷Ingredients (7 x 16 cm pound mold):
■Caramel
1 tbsp water
50 g granulated sugar
1 tbsp hot water

■Tiramisu-style pudding
100 g mascarpone cheese
3 whole eggs
60 g cane sugar
200ml milk
1 tsp vanilla extract
1 tbsp coffee liquid

■Sponge cake
1 egg yolk
1 tbsp coffee liquid
20 g cake flour or rice flour
3 g cocoa powder
1 egg white
20 g granulated sugar

▷Preparation:
1. Dissolve 2 g of instant coffee in 2 tbsp of hot water to make the coffee liquid.
2. Preheat oven to 150℃.
3. Prepare the hot water at 60°C.

▷How to make:
1. Place water and granulated sugar in a saucepan and scald the sugar until caramelized.
2. Remove the pan from the heat, add hot water, and pour the caramel into the pound molds.
3. Add the mascarpone cheese and the cane sugar and mix thoroughly until smooth.
4. Add the whole egg and mix until incorporated.
4. Add milk, cane sugar, and vanilla extract to the pan in which the caramel was prepared, and heat until the caramel is dissolved.
5. While stirring ③, add the warmed milk and mix well, then add the coffee liquid and strain the pudding liquid.
6. Add the coffee liquid, cake flour and cocoa powder to the egg yolks in this order and mix well.
7. Add granulated sugar to the egg whites in two batches to make a meringue.
8. Mix meringue and ⑥ until uniform.
9. Pour the pudding liquid and sponge batter in this order over the caramel, and bake in a preheated oven at 150℃ for 45-50 minutes in a hot water bath.
