✤ How to prepare French ratatou in the oven:

Ingredients for 4 people:

2 eggplants
2 zucchini
1 yellow pumpkin
2 capsicums (in desired color)
3 tomatoes
1 onion
2 cloves of garlic
2 tablespoons of olive oil
1 tablespoon of tomato paste
1/2 cup of water
1 teaspoon of salt
1/2 teaspoon of black pepper
1 teaspoon of dry thyme
1/2 teaspoon of dried basil

Cooking steps:

1. Heat the oven to 180 degrees Celsius.
2. Cut eggplants, pumpkins and bell peppers into 1 cm thick rings. Cut the tomatoes into 1/2 cm thick rings.
3. Finely chop the onion and grate the garlic.
4. Heat olive oil in a pot and fry the onion until it becomes soft and transparent. Then add the garlic and fry for another 30 seconds.
5. Add tomato paste, water, salt, black pepper, thyme and basil and boil for 5 minutes until the sauce thickens.
6. Cover the bottom of a pyrex dish or a suitable oven mold with sauce.
7. Place the rings of vegetables alternately in layers (for example, one layer of eggplant, one layer of pumpkin, one layer of sweet pepper, etc.) inside the dish.
8. Cover the vegetables with sauce.
9. Place the dish in the oven for 1 to 1.5 hours until the vegetables are cooked and soft and the sauce thickens.
10. After cooking, remove the ratatouille from the oven and wait 10 to 15 minutes for it to cool down a bit. Then serve and enjoy the delicious taste.

✤ Tips:

You can use your favorite vegetables in ratatouille.
For a stronger taste, you can add 1/2 teaspoon of cumin powder and 1/4 teaspoon of red chili powder to the sauce.
If you want to serve the ratatouille as **ganache**, you can mash the vegetables with a meat grinder after cooking. Then put the puree on low heat and gradually add milk or chicken stock to reach the desired consistency.
Ratatouille can be served alone or as a side dish with grilled chicken or meat.
