Ingredients:

Chicken legs/thighs (cut into bite-sized pieces)
Salt
Ground white pepper
Cooking oil
2 tbsp sesame oil
Sliced ginger
Garlic cloves
4 tbsp cooking wine (or rice wine)
3 tbsp soy sauce
Dark soy sauce (optional, for coloring)
1 tbsp rock sugar
Basil leaves

Instructions:

1. *Marinate the Chicken 🐔*
Cut the chicken legs/thighs into bite-sized pieces.
Marinate the chicken with salt and ground white pepper.
Let it marinate for 20 minutes.

2. *Prepare the Aromatics 🍲*
In a pot over medium-high heat, add some cooking oil and 2 tbsp of sesame oil.
Add sliced ginger and garlic cloves. Sauté until fragrant.

3. *Cook the Chicken 🍗*
Add the marinated chicken to the pot and pan-fry both sides until golden brown.
Add 4 tbsp cooking wine (or rice wine), 3 tbsp soy sauce, and optionally a bit of dark soy sauce for coloring.
Add 1 tbsp rock sugar.
Simmer for 20 minutes.

4. *Add Basil and Serve 🌿*
Add basil leaves and stir until they wilt.
