Ingredients:

• 10-15 dried shiitake mushrooms
• 600g chicken wings
• 2 tbsp soy sauce (for marinating)
• 1 tbsp oyster sauce (for marinating)
• 1 tsp ground white pepper
• 1/2 tsp sugar
• 1 tbsp cornstarch
• 2-3 cloves garlic, minced
• 1 inch ginger, sliced
• 2 green onions, chopped
• Oil (for frying)

Sauce Ingredients:

• 2 tbsp cooking wine
• 1 tbsp soy sauce
• 1 tbsp oyster sauce
• 1/2 tbsp dark soy sauce
• 1/2 cup water
• 1/2 tbsp soybean paste

Instructions:

1. Soak the Mushrooms 🍄
Soak the dried shiitake mushrooms in warm water for about 1 hour.

2. Marinate the Chicken 🍗
Chop the 600g chicken wings in half. In a bowl, mix 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp ground white pepper, 1/2 tsp sugar, and 1 tbsp cornstarch. Add the chicken wings and coat them well. Marinate for 20 minutes.

3. Prepare the Sauce 🍶
In another bowl, mix all the sauce ingredients: 2 tbsp cooking wine, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1/2 tbsp dark soy sauce, 1/2 cup water, and 1/2 tbsp soybean paste. Stir until well combined.

4. Pan-Fry the Chicken
Heat some oil in a pan over medium heat. Pan-fry the chicken wings until they are golden brown on both sides. Remove from the pan and set aside.

5. Cook in a Clay Pot 🍲
In a clay pot, heat some oil. Add the minced garlic, sliced ginger, and chopped green onions. Sauté until fragrant. Add the soaked shiitake mushrooms and stir-fry for a few minutes. Then, return the chicken wings to the pot and pour in the prepared sauce. Bring to a boil, then reduce the heat to medium-low and cook for 8 minutes.

6. Garnish and Serve 🌿
Garnish with extra chopped green onions. Enjoy your meal!
