Bandi's SUPER MOIST dinner rolls recipe~!
As you can see from the video,
It's really moist and soft.
This recipe was completed after many tests.

Ingredients
(dinner rolls 14 pieces)

Bread flour 200g
Cake flour 100g
Sugar 20g
Salt 4g
Instant dry yeast 6g
Water 100g
Whipping cream 60g
Egg 1
Butter 30g

(For surface coating)
A little bit of melted butter


Process
1. Add all the flour, yeast, sugar and salt to the mixing ball.
2. Mix the powders at a low speed. then, add water, heavy cream, and an egg and mix them together (low speed).
3. When the mixing bowl is clean and the dough comes together, add butter and mix at low speed.
4. When butter seeps into the dough, knead it at high speed. (high speed)
5. Round the dough and First fermentation (50mins~ 1hr) (Inflating 2-3 times)
6. Divide the fermented dough by 40g.
7. Round the dough and Intermediate fermentation (10 min).
8. Round the doug, put it in the baking pan, and Secondary fermentation (20~30 min)
(It is better to apply milk on the surface before baking.)
9. Bake 10 to 15 minutes in a preheated 170°C oven.
(Please adjust the temperature and time according to the oven.)
10. Apply butter to the surface as soon as it is baked.

※ If you put the dough in a closed space with warm water, it will ferment
(I use an oven or microwave as a fermentation room.)

Water temperature
Summer : 0~7°C , winter : 36~38°C (approximately)


Q&A
Why do we use cake flour to make bread?
Bread flour gives chewy texture.
and Cake flour gives soft texture.
To make the bread as soft as possible, I added the cake flour.

-The dough looks much watery than the other recipes. Is that right?
That's right.
When the moist dough is baked, the bread is moist and delicious.
(The reason the bakery's bread is moist and delicious
is because it is made with watery dough.)
