15# Folding Milk Bread
It’s first time to take bread making video.
So, I was nervous about how I can make good bread making video.
I hope you guys flow my video and recipe and you can enjoy fresh bread home easily with fun.

I don’t have any bread machine as well. I have only 5 speeds hand mixer.
After I’ve came Prince Edward Island in Canada,
I was thinking how I can make bread home easily without kneading,
I came up with this no knead bread recipe.
I already know folding can make bread better, but I didn’t realized how folding is good.
It took time more, but the time and folding make us to make bread easily.

I really hope you guys try this recipe and have fresh bread home.

Ingredient | 재료 (20*20cm Square tin) ** 1cup(250ml) & 1Tbsp(15ml) **
** Some ingredient is not exactly same with that you measure ‘g’.
But, I hope it will be helpful to you guys♥ *
200g (1+1/3cup) bread flour | 강력분
200g (1+1/3cup) all purpose flour | 중력분
** Refer it :: You can use 400g of all purpose flour as well.
But, the volume of bread will be smaller than original one.
And taste will be little bit different. (less fluffy)
Because, all purpose flour has less protein, that’s why it's difficult to develop gluten.
But, it's still good.**
15g sugar (1Tbsp+1tsp) | 설탕
4g salt (1tsp) | 소금
4g instant dry yeast(1tsp) | 인스턴트 드라이 이스트(대략 4g)

30g (1+1/2Tbsp) honey | 꿀
240g (232ml) milk | 우유
If your working place is ‘hot and humid’, use 10g (10ml) less milk *
1 egg (50g) | 계란

25g unsalted butter (1+2/3Tbsp) | 무염버터

egg wash | 계란물
1 egg yolk | 노른자

1 tsp milk | 우유

Use room temperature non-salt! (Bread doesn't prove well when it's cold.)
The current temperature here in Prince Edward Island, Canada is about 10 degrees Celsius, but our indoor temperature home was just over 23 degrees Celsius. If it's too hot, the bread will prove quickly, and if it's cold, it could take longer.

1. Mix flour, sugar, salt, and yeast.
(After coating yeast lightly with flour, mix other things.)
2. Heat honey and milk together in microwave for 1 1/2 minutes, then mix in room temperature eggs.
(It'll be a little bit warm if you touch it with your hand.)
3. Add liquid to flour and mix well enough to absorb.
4. Let it rest for 15 minutes.
(to allow time for dust and liquids to absorb into each other and become flexible)
5. Put butter in the dough and absorb it.
(It doesn't mix well at first. Just rub the dough until it feels like butter has been absorbed!)
6. Let prove for 40 minutes.
7. Fold the dough, just like in the video. (It helps gluten strengthen)
8. Let prove again for 30 minutes.
9. Fold the dough one more time.
10. Let prove again for 40 minutes.
11. Divide the dough into 16 equal pieces. It will be approximately 47 to 48 grams per piece.
12. After rounding, let the dough rest for 20 minutes.
13. Mold shape and mold and put it tin.
14. Finally, prove for 40 to 50 minutes.
(It took 40 minutes, but it could take longer. Please decide whether to bake or not by looking)
15. Apply egg wash evenly to the surface and bake for 20 minutes in a preheated 190 degree oven.
16. All we have to do is enjoy eating! ^^


♣ Q : My kitchen is so hot. Is it okay to proof bread? (Choose one)
A : (1) You can reduce the first proofing time. (30-40-30 min ☞ 25-35-25min)
Or (2) Can use room temperature milk (not warm)
