If you have never had or made Dirty Rice, then you have no idea what you are missing! Easy to make and so full of flavor! Can be adjusted to be a main entrée or as a side dish!

Louisiana Dirty Rice

1 1/2 Lbs ground meat (ground beef, pork, even e breakfast sausage such as Jimmy Dean. I have even used ground Italian sausage) any combination works. I used 1 LB ground beef and 1/2 LB ground pork this time

bell pepper, chopped (this time I used 1 green bell pepper, 1/2 red bell pepper)
1 med-large onion chopped fine
2-3 ribs celery, chopped
3-4 cloves garlic, chopped or roasted
Cajun seasoning to taste. NOTE: I am using MY Cajun Seasoning blend, if you are using Tony's or Chef Paul etc, you will need to check your package directions)
1 tsp salt (to taste)
5 cups boiling water (I also use hot beef broth instead of the water, same measurement)
1 TABLEspoon butter
2 1/2 cups long grain rice

Sauté the vegetables, adding garlic only for the last couple of minutes and set aside. Next, brown the meat well (cast iron is best to use if possible). Add the sautéed mixture back in. Add in the Cajun seasoning and the salt. Next, add in the boiling water (or beef broth). Add butter and lastly the rice. Give a good stir. Bring up to a rolling boil and then turn heat down to low. Cover the pot and simmer on low for 20 minutes. Resist the urge to "check it". Don't stir the pot. After 20 minutes, turn heat off and allow to stand for 5-6 minutes. Fluff with a fork and ENJOY!
