This dessert is chewy on the outside & sweet on the inside.

Ingredients needed:

For wrapping:
- 3-4 tbsp coconut oil
- 1 pack of banana leaves wash & cut

For filling:
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 2.5 tsp water
- 1 tsp tapioca flour/starch
- 1.5-2 cups shredded coconut

For dough:
- 1 bag glutinous rice flour
- 3/4 cup rice flour
- 1/4 cup sugar
- 1 tsp pandan extract (optional)
- 1 cup coconut milk
- 2 cups room temperature water
*this recipe makes 18-21 wraps*

1. Wash, cut & wipe banana leaves then set aside. Melt coconut oil in a bowl then set aside.
2. In a pan cook sugar, salt, water, tapioca flour & shredded coconut. Let it simmer until most liquid is gone. Stir often. When it’s finished, set aside.
3. Make dough & knead until smooth. Create balls then set aside on a plate lined with parchment paper.
4. Take dough balls & flatten into a circle, add a spoonful of filling then roll back into a circle. Placing filled balls on another plate thats lined with parchment paper.
5. Wrap (oil each banana leaf before wrapping), then put into the steamer & steam for 35-45 mins. Enjoy!!!
