Today we run a biscuit test on our 500 gallon offset smoker. Here are some specs on the smoker. 36” x 38” firebox insulated with ceramic fiber insulation. We don’t just insulate a couple inches around the interior firebox we completely fill the whole cavity. We use an 8” pipe for the smoker along with a collector. This particular unit came with a traditional paddle damper at the top of the smokestack but standard they come with internal dampers. The last element to the cooking anatomy would be the heat deflector we use to lower the radiant temperature blasting the protein.

In this video you will see the evenness of the cook throughout the cook chamber. As usual the temperature is always hottest at the top rack closest to the firebox but even then with such a delicate piece of food, being dough you can still see how well it performed.
