Parsley Hummus
1 15oz (236g) can chickpeas drained, the liquid reserved
3 cloves of garlic, smashed and peeled
1 teaspoon salt
The juice of one lemon
1/4 cup (a handful) parsley leaves, roughly chopped
1 scallion, roughly chopped
1/3 cup (80mL) Tahini sauce
1/4 teaspoon smoked paprika
Small pinch of cayenne pepper (optional)
1 Tablespoon extra virgin olive oil

Put all of the ingredients plus half of the reserved chickpea liquid into the bowl of a food processor. Blend to a smooth puree. Thin out the hummus with additional chickpea liquid, if necessary. Enjoy!
