"Apricot Umeboshi" can be easily made even if you don't live in Japan.
I have been living in Germany for about 5 years.
As a summer assignment, I made "Umeboshi", which I've always wanted to make, by substituting apricots.
Umeboshi can be purchased at Japanese food markets in Germany for €10 (about 1500 yen) per pack (about 150g), but of course it's more expensive than what you can buy in Japan.
This is a recipe that I would like people who live abroad and miss the taste of Japan to try.
■ Basic ingredients:
Apricot 1kg
Salt 150g (for a salt content of 15%)
Appropriate amount of white liquor (35% alcohol or more)
■ Tools:
Zipper bag
Weight (anything heavy at home will do)
Container (jam glass jar, etc.)
*Adjust the amount of salt to your liking. About 10 to 18% of the amount of apricots is OK!
