My favorite, coriander(cilantro) kimchi is what all kimchi dreams are made of!
Tangy, flavorful, and so easy to make. This kimchi can be enjoyed all year round as a side dish or assemble it in your nourish bowl, topped over rice with a fried egg and avocado!

고수김치와 아보카도 덮밥(Gosu kimchi & Avocado Dupbap) | Coriander Kimchi & Avocado Bowl
(makes 1 small jar: 0.5 quarts)

[Ingredients]
Coriander(cilantro) 150g(5oz./3cups)
Green onion 100g (3.5oz./2cups)
Fish sauce 3 tbsp (Thai or Vietnamese fish sauce)

[Kimchi Paste]
Gochugaru(Korean chili flakes) 3 tbsp
Water 2 tbsp
Red bell pepper(diced) ⅓ cup
Onion(diced) ⅓ cup
Garlic 2 cloves
Ginger 1 thin slice
Toasted sesame seeds 1 tsp

[For Avocado Bowl]
Cooked rice(Check out my recipe for "Quinoa rice") 1 bowl
½ Avocado(sliced)
1 Egg
Sesame oil(optional) 1 tsp
