Importance of Moringa Leaves;
Murungai keerai is also known as moringa leaves or drumstick leaves. The plant that produces these leaves is called the moringa tree, which has many other names, including the drumstick tree, miracle tree, horseradish tree, and ben oil tree. Moringa leaves have been used in South Indian cooking for a long time and are known for their medicinal properties.
Moringa leaves contain many essential compounds, including vitamins A, B1, B2, and B3, as well as vitamin C, calcium, potassium, iron, magnesium, and phosphorus. They also contain protein, amino acids, and antioxidants. Some say that moringa leaves may help protect and nourish skin and hair, treat edema, protect the liver, and prevent and treat cancer. Others say that the leaves have about as much potassium as a banana and as much vitamin C as an orange

Ingredients
துவரம் பருப்பு / Toor Dal - 1 Cup
பாசிப்பருப்பு / Moong Dal - 1/2 Cup
முருங்கை கீரை / Drumstick Leaves
சின்ன வெங்காயம் / Small Onion - 15 Nos
பூண்டு / Garlic - 10 Pieces
பச்சை மிளகாய் / Green Chilli - 1
கருவேப்பிலை / Curry Leaves
கொத்தமல்லி / Coriander Leaves
தக்காளி / Tomato - 2
நல்லெண்ணய் / Sesame oil - 2 TBSP
கடுகு / Mustard Seeds - 1/4 Spoon
சீரகம் / Cumin Seeds - 1/4 Spoon
காய்ந்த மிளகாய் / Dry Chilli - 4
மஞ்சள் தூள் / Turmeric Powder
குழம்பு தூள் / Kulambu Powder - 1 1/2 TBSP
பெருங்காயம் / Asafoetida
உப்பு / Salt
புளி / Tamarind

Instructions:

1. Wash and clean the drumstick leaves. Remove the stems and tear the leaves into small pieces.
2. Cook the lentils in water until they are soft and mushy. Drain and set aside.
3. Heat oil in a pan and add mustard seeds, cumin seeds, onion, garlic, and ginger. Saute until the onion is translucent.
4. Add the drumstick leaves, turmeric powder, sambar powder, and salt. Saute until the leaves are wilted.
5. Add the cooked lentils, tamarind paste, and 1 cup water. Bring to a boil and simmer for 10 minutes.
6. Garnish with chopped coriander, if desired.
7. Serve hot with rice or idlis.
