Who doesn't love Gnocchi raise your hand... I love them, but the original ones with Potatoes!
It's a first course that's festive, delicious and healthy, and also lighter than common pasta,
being made with more potatoes than flour.
I don't add eggs, I follow my grandmother's homemade recipe, and they are truly excellent both in flavor and consistency!
Follow the simple TUTORIAL and I will reveal all the secrets to obtaining the right consistency!
They can be seasoned in a thousand ways but the classic is with Sausage sauce, but today I wanted to make them ALLA SORRENTINA to pay homage to my beloved SORRENTO, they practically toast each other in the oven with the addition of mozzarella!
📝Ingredients for 3-4 people:
600 g Boiled potatoes weighed already boiled (about 5 medium potatoes)
200-250 g Flour
1 pinch of salt
📝For the sauce
Date tomatoes
1 clove of garlic
Extra virgin olive oil
Basil
Chilli pepper
1 mozzarella cheese
200 g Mozzarella cheese
Grana or Parmigiano Reggiano cheese
Smoked ricotta (optional)
