Today's recipe is for a chocolate mousse cake made without an oven.
The mousse has a melt-in-your-mouth texture and is finished with a glossy glaze.

▷Ingredients (17 x 6 cm pound cake mold)
2 egg yolks
40 g sugar
5 g cocoa powder
160 ml milk
5ml rum
3g gelatine sheet
120g sweet chocolate
170ml heavy cream
10g sugar
20-30g cookies

■Chocolat glacée
2 g gelatin sheet
45 g sugar
15 g cocoa powder
40 g water
30 g whipped cream
20 g sweet chocolate


1. chop the sweet chocolate. Blanch the gelatin sheets in ice water.
2. Beat the egg yolks with the sugar until white. Add sifted cocoa powder, milk and rum.
3. Put ② in a saucepan and heat over low heat until the temperature reaches 80°C. Remove from heat and add the sweet chocolate. Remove from heat and add sweet chocolate.
4. Add the drained gelatin board and mix. Strain so that no lumps remain.
5. Add the sugar to the cream and beat gently. Add to the cream and mix.
6. Line a pound cake mold with a cookie sheet, pour in the mousse, and refrigerate for 30 minutes. Place crushed cookies on top and freeze in the freezer for 8 hours or longer to harden.

7. Blanch the gelatin in ice water. Mix the cocoa and sugar in a saucepan, add the water and mix well. Add the cream.
8. Heat over low heat until the mixture comes to a boil, then lower the heat and add the sweet chocolate. When melted, add the drained gelatin and mix.
9. Strain the glacage chocolat and keep the temperature at about 35℃.

10. Place the chocolate mousse on a mesh and pour the glacage over it. Thaw in the refrigerator.
11. Decorate with cocoa powder and pistachios.
