We smoked some St. Louis style ribs 3 different ways hot and fast as opposed to low and slow. The base of the sauce we are using today is
1 cup of ketchup
3/8 cup brown sugar
.5 tablespoon paprika
.5 tablespoon chili powder
.5 tablespoon onion powder
.5 tablespoon garlic powder
.5 teaspoon ground pepper
1/4 cup apple cider vinegar
1/4 cup water or apple juice
1 tablespoon worchestire sauce
add in 2-4 tablespoons of mikes hot honey for the spicy version or 2-4 tablespoons of regular honey for the sweet version.
I taste my sauce before it is finished to fine tune it. sometimes it isn't sweet enough and I'll add in more brown sugar or ill add in more hot honey. this recipe is a base for your sauce. You can add in whatever flavor or notes you want to make it unique. you can add in molasses or maple syrup or a shot of whiskey to add the flavors you like. Hope you enjoy the ribs!
