Today I’m at a bakery called Pain Nest in Ogori-shi, Fukuoka. As soon as you walk through
the green archway, you will arrive at the bakery that is beloved by the locals. Pain Nest
uses a waterwheel-driven millstone to grind their flour and they are known for their long-
fermented mochi like dough.
