Hey! Come clean and meal prep with me! This is my first official meal prep for 2024, and it feels so good to get back to it I am going to be doing some fridge restock, and getting easy foods ready for my family for the week. I also throw in a little cleaning motivation because I think it makes it that much better to put all of that food into a clean fridge!I don't think that meal prep has to be complicated, nor do I think that you have to have a fully fledged idea when you do it! Make things that you like that can be mixed and matched or that can make dinner time go faster because 50-90% of it is already made! My goal is to help you make meal prep easer-especially FAMILY meal prep, with lots of healthy recipes!

RECIPES:
Choose Your Own Adventure Chicken Salad:
1 Rotisserie Chickens worth of meat cut into bite sized pieces
Your favorite fruits and vegetables that would pair well in whatever quantity you want!
( I used Cucumber, Celery, Red Onion, Grapes and Apple)
Cottage Cheese (I used about 3/4 cup)
Plain Yogurt (1/4 cup)
Dijon Mustard (abt 3 Tbs)
Red Whine Vinegar (abt 1 Tbs) Lemon juice is great too!
Dried or Fresh Parsley (or not, I don't know if it adds much but it looks pretty)
Salt and Pepper* to taste

Chop everything into whatever size you like, and combine all ingredients. Enjoy!
*note: Per my late Great Grandfather, once you think you have added enough ground pepper, add some more!

Roasted Sweet Potatoes and Chickpeas:
Sweet Potatoes
Chickpeas (I did 3 cans)
Olive Oil
Salt
Pepper
Garlic Powder
Onion Powder

Preheat oven to 400F. Wash and peel sweet potatoes, add to bowl. Combine with oil and seasonings-dealers choice for what and how much! Bake on separate foil lined pan for 20-ish minutes stirring halfway through.

For the chickpeas, drain and rinse. Do the same thing as you did the sweet potatoes!

I like to store in glass containers for extended freshness.

Roasted Peppers and Chicken Apple Sausages:
Aidells Chicken Apple Sausages, sliced into bit sized pieces (I used 6)
3 Bell Peppers chopped into bite sized pieces
Avocado Oil
Salt and Pepper:

Combine ingredients onto a foil lined pan. Roast in a 400F oven for 15-20 minutes. I turn the broiler on for a few minutes at the end to get some color on them.
