Spot Prawn season is popular here in Vancouver, BC! BC spot prawns have a firm texture and are sweet similar to lobster. Here is a step-by-step tutorial on how to cook and enjoy this local seasonal seafood specialty 3 different ways :) A heads up that the spot prawn season is very short, ranging from 6-8 weeks.

Pro-Tips:
1. Consumption: Best to consume on day of!
Otherwise, remove the heads and rinse tails because the spot prawns will release an enzyme that will cause the meat to be mushy (if left alive too long out of water).

2. Buying: prawns are lively and translucent with firm heads.
After buying prawns, put into a cooler with ice packs. Do not submerge the prawns in tap water (only lightly rinse off with cold water during prep).

3. Raw: Eat on same day as purchase/caught/alive, keep cold during entire process

4. Cooking Time: quick - range from 30 seconds to 2 minutes
