Pecan Cake
1 1/2 cups SELF RISING (self raising) Flour
1 1/2 cups brown sugar (light or dark)
1/2 cup sugar
1 stick of melted butter (8 TABLEspoons)
1/2 cup vegetable oil
2 teaspoons vanilla extract (I do NOT recommend imitation vanilla)
1 1/2-2 cups pecans, chopped
NOTE: You could add add in some chocolate morsels, though you will find they are not needed
Preheat oven to 350F (176C) In a mixing bowl add the flour, sugars, melted butter, vegetable oil and vanilla extract. Mix thoroughly. No need for an electric mixer, for this it would be overkill. Stir in chopped paeans. Spray a 13x9 pan. Spread batter evenly in the pan. I recommend placing the pan on a foiled covered baking sheet, as this can occasionally puff up over the sides. The batter does settle down after this. Bake for 30-35 minutes. Place on a cooling rack for 15-20 minutes. ENJOY!
