Healing Broth Soup
Prep Time: 20-30 minutes
Cook Time: Additional 20-30 minutes
Total Time: 1 hour
Yield: 8 quarts

Aromatics:
1/4 cup coconut or avocado oil
1-2 large onions - diced
6-8 large button or crimini mushrooms - sliced
2 stalks celery - chopped
1/2 -1 garlic bulbs (8-10 cloves) - minced

Soup Base:
8 cups (2 quarts) water
2 cups (1 pint) vegetable, meat or bone broth
1 28 ounce can of crushed tomatoes or 1 quart of home canned tomatoes - optional

Vegetables:
1 large turnip - diced
1 large or 2 small parsnips - diced
1 large leek - sliced
2 white sweet potatoes - diced
4 curly kale leaves - removed from stalk and torn into 1.5” pieces
2 (fresh or frozen) roasted green chilis or 1, 4 ounce can of diced green chilies

Seasonings:
(measurement are just approximations - adjust to your taste)
2 teaspoons pink salt
1 teaspoon black pepper
2 Tablespoons powdered, dehydrated tomatoes (optional)
1/2 teaspoon cayenne powder
4 dried sage leaves
Sprinkling of basil

Meat (optional):
2-4 polish or andouille sausages

Instructions:

Add oil to heavy-bottomed 10-12 quart soup pan. Over Medium-high heat sauté onions, mushrooms, celery and garlic. Continue cooking until deep caramelization on the bottom of the pan develops.

Meanwhile continue cutting up the veggies while the aromatics are caramelizing.

Once aromatics are caramelized add the soup base ingredients - water, broth and crushed tomatoes.

Now add in vegetables and seasonings and cook on medium to medium-high heat until vegetables are soft and cooked through.

Mix in sausage or whatever meat you are using. Once it is heated through, remove soup from the heat.

Tear kales leaves from the stalk and add to the soup.

Now you are ready to make soup!
