Recipe 💜
3 TBSP Olive Oil
2 TBSP Tomato Paste
4 Cloves Garlic (Either Minced or thinly sliced)
1lb 7oz of Tomatoes (That’s about 3 large tomatoes)
1 Large Bell Pepper (Any Color)
3/4 C Water
1 tsp Salt
1/2 tsp black pepper
1 tsp paprika
1/2 tsp cumin
1/4 tsp tumeric
1/8 tsp cayenne pepper
2 TBSP fresh parsley (chopped)
2 TBSP fresh cilantro (chopped)
1/2 C crumbled Feta (Or more if you like)
5-6 Large Eggs

Fresh Bread (Of your Choice)
Salt
Dried Basil
Olive oil

TIPS!
1. Feel free to use a variety of tomatoes! I like to use a mix of beef steak tomatoes, tomatoes on the vine, & cherry tomatoes. As long as it all equals to around 1lb 7oz. (A food scale will come in handy. I got mine from Amazon for $9)

2. Use A variety of different breads. I like cheese breads, tomato basil bread, Parmesan crusted bread, etc The options are endless!

3. You can chop your tomatoes as small or as large as you please. But please chop your bell peppers small so they can get SOFT.

4. Watch your eggs closely. 3 minutes on medium heat gives me a soft poached egg. Keep in mind that your eggs will continue cooking even when you turn the stove off because the pan & sauce will still be hot.
