RECIPE for this dish 👇👇👇 :

BASIC INGREDIENTS👇 :
ÂŊ kg boneless mutton, marinated overnight with marinade, 1 cup basmati rice soaked for 30 min, Ghee, Oil, Butter, 4 potatoes cut into halves, fried ( optional with a pinch of turmeric ), 2 boiled eggs, fried ( optional with a pinch of turmeric ), handful pitted prunes, Meetha attar, Saffron strands, Milk, Kewra water, Rose Water, 3 onions sliced fine and fried

BIRYANI MASALA INGREDIENTS👇 :
2 X 3” cinnamon, 1 tbsp whole cumin, 1 tbsp kababchini, 1 tbsp white pepper, 1 tsp fennel seeds, 1 star anise, ÂŊ tsp black pepper, 1 nutmeg, 1 mace, 8 cloves, 1 black cardamom, 6 green cardamom. TO MAKE MASALA dry roast and grind all of this

MARINADE INGREDIENTS 👇 :
1 tsp ginger paste, 1 tsp garlic paste, 3 tbsp yoghurt, half the fried onions, 1 tbsp rose water, ÂŊ tsp kewra water, 1 tbsp Biryana Masala, 1 tsp coriander powder, 1 tsp cumin powder, 1 tsp chilli powder, 1 tsp turmeric powder, salt to taste, 1 tbsp oil, 3 tbsp curd. TO MAKE MARINADE, mix everything together well.

RICE COOKING INGREDIENTS 👇 :
1 tsp cloves, 1 tbsp fennel seeds, 3 green cardamom, 2X 2” cinnamon, 2 bay leaves

COOKING METHOD 👇 :
Heat ghee plus oil in a pressure cooker, to it add the marinated meat, stir 5-7 min
Add fried potatoes, salt to taste, water to cover everything, and pressurise 12 min on high heat, 12 min on simmer
Place Rice Cooking ingredients in a large metal strainer suspended over a pan of boiling water.
Cook the soaked rice in this water with 1 tbsp oil and salt to taste, till rice is NEARLY done
Add food colour and saffron strands to milk and dissolve
In a large pot arrange Biryani layers in this order : half the cooked rice/ biryani masala & salt / cooked mutton & potatoes & prunes / fried onions / biryani masala / mutton gravy / few drops meetha attar, 1 tbsp rose water, ÂŊ tsp kewra water / remaining rice / biryani masala & salt / melted butter + ghee / flavoured milk and eggs
Seal pot tightly with foil, place pot over pan of boiling water and cook in indirect heat
