Oil Down is a one pot meal, easy to put together and extremely delicious! It is made with breadfruit (Artocarpus altilis) , coconut milk, spinach (bhagi) and any meat of your preference, simmered down to form a thick soup-like consitency. Grenada's national dish is oil down but their recipe is different to how we make oil down in Trinbago. Here's what you will need.

1 medium breadfruit, peeled, cored and cut into chunks
1 lb of pigtails, boiled and cut up (trim off excess fat)
4-6 dasheen bush (bhagi) or spinach leaves
1 onion, diced
8-10 cloves of garlic, minced
1 hot pepper
5-8 pimento peppers, chopped
1 small carrot, cubed
1 small sweet pepper (bell pepper), cubed
1 pack of Maggi Vegetable Soup Mix
2 cups of coconut milk (1 can)
1 tbsp golden ray butter
1/2 cup green seasoning.
4 cups of hot water
salt
oil
