Sheet Pan Pizza! AKA Grandma Style, Recipe Below👇

Dough:
295g Warm Water
7g Dry Active Yeast
25g Olive Oil
420g Ap Flour
8g Salt
Additional Olive Oil for tray

Sauce:
28oz Crushed Canned Tomatoes
2TBS Tomato Paste
2 Cloves Garlic
2TBS Oregano
1TBS Salt
2TBSOlive Oil
Blend Together

Toppings:
Low Moisture Mozzarella
Fresh Mozzarella
Calabrese
Pizza Sauce
Parmesan Cheese


Activate the Yeast:
In the bowl of your stand mixer fitted with the dough hook attachment, combine the warm water and dry active yeast. Stir gently to dissolve the yeast. Let it sit for about 5-10 minutes until the mixture becomes frothy, indicating that the yeast is active.

Mixing the Dough:
Add olive oil to the yeast mixture in the stand mixer bowl. Then, add the flour and salt.
Start the mixer on low speed to incorporate the ingredients. Once the dough begins to come together, increase the speed to medium-low and knead for about 5-7 minutes, or until the dough is smooth and elastic. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.

First Rise (Proofing):
Form the dough into a ball and place it in a lightly oiled bowl, turning to coat the dough with oil. Cover the bowl with plastic wrap or a kitchen towel.
Let the dough rise in a warm, draft-free place for about 1 to 1.5 hours, or until it has doubled in size. For more flavor, allow this to sit in the fridge for 24 hours before using.

Preparing the Sheet Pan:
Preheat your oven to 500F°F. Lightly grease a rimmed baking sheet (approximately 18x13 inches) with olive oil.

Shaping the Dough:
Once the dough has risen, gently punch it down to release the air. Transfer the dough to the prepared sheet pan.
Using your fingertips, press and stretch the dough evenly to cover the entire surface of the sheet pan. If the dough springs back, let it rest for a few minutes and then continue stretching.

Topping the Pizza:
Add your desired toppings evenly over the stretched dough. You can use tomato sauce, cheese, vegetables, meats, or any toppings you prefer.

Baking the Pizza:
Place the sheet pan in the preheated oven and bake for 15-20 minutes, or until the crust is golden brown and the cheese (if using) is melted and bubbly.

Cooling and Serving:
Once baked, remove the sheet pan pizza from the oven and let it cool for a few minutes before slicing. Slice and serve warm.
