Parboiled Squid (preparation & vinegar-based red pepper sauce)


[Ingredients]

*Parboiled squid

1 squid (250g)
1 tbsp of scallion (3g)
2 garlic cloves (12g)
A pinch of sesame seeds (1g)
1 Cheongyang pepper (8g)

*Parboiled squid ingredients

Water (8L)
1 tbsp of salt (10g)
1/2 cup of vinegar (90g)
1/2 cup of cooking wine (90g)

*Vinegar-based red pepper sauce

*Ver. 1
Pepper paste 3 tbsp (45g)
Vinegar 2 tbsp (20g)
Sugar 1 tbsp (12g)
Coarse chili powder 1 tbsp (10g)

*Ver. 2
Ver.1 sauce 2 tbsp (30g)
Minced garlic 1/2 tsp (2g)
A pinch of ground sesame seeds (1g)
Sesame oil 1/2 tbsp (4g)
Some scallions (1g)

[Directions]

*Preparing

1. After defrosting frozen squids, clean them by cutting it open first.
2. Grab the tentacles and pull to separate them from the body.
3. Remove transparent bone. For the upper part of bone, place the thumb under the bone and push and pull to remove cleanly.
4. Pull on innards on each side of body to remove them.
5. Use scissors to cut off guts around tentacles.
6. Remove the eyes near the upper part of tentacles by cutting the area between the eyes open with scissors.
7. Open up cut area and pull on eyes to remove without bursting them.
8. Remove squid’s beak near the eye area using scissors.
9. Remove suckers on each tentacle by gently scraping.

*Parboiling

1. Add water, salt, vinegar, and cooking wine to a pot and bring to a boil.
2. Add prepared squid body and tentacles.
3. Parboil for 1 minute until squid becomes firm and white.
4. Once squid is cooked, cool in cold water.

*Making vinegar-based red pepper sauce

- Ver. 1: Add red pepper paste, vinegar, and sugar to a bowl and mix.
- Ver. 2: Put Ver. 1 sauce in a bowl and mix in minced garlic, ground sesame seeds, sesame oil, and scallions.

*Plating

1. Cut squid’s body in 1cm-wide pieces and put on a plate.
2. Divide the tentacles into tenths and plate.
3. Serve with scallions, garlic, and Cheongyang pepper.
