#025 Roasted chicken

※For 1 chicken
【Ingredients/amount】
Whole chicken (1.8 kg)--------------1
Carrot-----------------------------------------1
Potato----------------------------------------2
Celery-----------------------------------------1
Purple onion-------------------------------1
Pecoros--------------------------------------1
Garlic------------------------------------------1
Lemon----------------------------------------2
Rosemary----------------------------------desired amount
Butter----------------------------------------50 g
Olive oil -----------------------------------desired amount
Consomme soup----------------------350 ml
Red wine-----------------------------------2 - 3 Tbsp
Salt and pepper-------------------------a little per each
Romaine lettuce (small)------------5 - 6 leaves

【Cooking process】
① Cut a carrot and potato into 2 - 3 cm round, cut celery with the skin, cut a purple onion randomly, cut a pecoros in half, crush the garlic with the skin, cut a lemon randomly.

②Clean a whole chicken both outside and inside, wipe the moisture off, put ① and rosemary.

③Place rest of ① and rosemary in an oven plate, put an oven net on it, put the whole chicken on the oven net, sprinkle butter (30 g) and put some butter in the chicken, sprinkle salt, pour in and olive oil over the chicken.

④ Roast it in a 200° preheated oven for 90 min.

⑤ Take the vegetables out from the chicken. Blend the roasted vegetables (except for burned parts and lemon) and consomme soup (200 ml) in a food processor.

⑥ Boil down a butter (20 g), ⑤, consomme soup (150 ml), red wine, salt and pepper in a frying pan, strain it.

⑦ Decorate the whole chicken on a plate, place ⑥’s sauce, romaine lettuce, grated lemon, half a lemon, and rosemary, pour in an olive oil over the dish.
