Today Joan prepares a classic salad dressing, Green Goddess. It's believed that this originated in 1923, at San Francisco's Palace Hotel, in honor of the lead actor in a play called Green Goddess. Based on the French Sauce Verte (Green Sauce,) the original was a combination of mayonnaise, sour cream, tarragon, chives, and anchovies. This version uses egg yolk to emulsify olive oil and a combination of lemon/lime juice and vinegar, basically a homemade mayonnaise, and then blends in a tasty combination of herbs, shallots, and garlic. It's finished with avocado for a rich and creamy sauce, best tossed with soft mild lettuce such as butter or little gem.
