The elegant Quail with Rice is a tremendously simple and relatively rapid preparation. The quail are coloured and then added to the rice half way through its cooking. This version comes from the Bible of French bourgeois cookery, La Bonne Cuisine de Mme. E. Saint-Ange from 1927.
