Kerupuk is a popular Indonesian snack. It's usually served with dinner for a crunchy contrast to other dishes. Today I'm making kerupuk udang which is a shrimp flavoured cracker. The main ingredient is tapioca or cassava flour. When you buy kerupuk in a store it's always in it's dry, uncooked form. Today's brand of choice is komodo which makes large crackers. if you were to buy these pre-cooked the bag would be enormous!

At some asian markets you can find pre-cooked smaller kerupuk in the chip and snack aisle but it's just not the same as eating them when they are freshly fried.
