Dakbaeksuk

[Ingredients]

Baeksuk ingredients
1 Chicken
2 stalks of Green onion
1 handful of Chives
Garlic 10 cloves
Ginger 1 piece
2 Onions
Water 3L
Salt
Pepper

Sauce
Coarse chili powder 1 tbsp(15g)
Hot water (broth) 1 tbsp(15ml)
Minced garlic 1/2 tsp(3g)
Diced green onion 1/2 tsp(3g)
Light mustard 1/3 tsp(2g)
Dark soy sauce 2 tbsp(30ml)
Vinegar 1 tbsp(15ml)
Sugar 1/2 tsp(3g)


[Directions]

〈Making Dakbaeksuk〉

Step 1: Prepare chicken

- Cut off tips of wings.

- Cut breast area in half.

- Remove fat from tail area of chicken.

- Wash out intestines under running water.
(Put finger in intestines area and remove intestines.)


Step 2: Boil Dakbaeksuk

- Put 3L of water in pot and place prepared chicken inside.

- Add 2 stalks of green onion and 2 onions.

- Add 10 cloves of garlic and 1 piece of ginger.

- Boil for approximately 30~45 minutes.
(Change cooking time depending on size of pot and heat.)

- Flip over chicken in the middle.

- Plate boiled chicken.

- Use sieve to separate vegetables from broth.

- Slice chives and green onion into 10cm-long pieces and parboil in broth.

- Place parboiled broth on plate on top of chicken.

- Pour hot broth on Dakbaeksuk.

- Pair with sauce, salt, and pepper.


〈Make sauce〉

1. Add coarse chili powder in bowl and mix in hot water.
(Ratio of pepper powder and hote water should be 1:1.)

2. In a small bowl, add one tbsp of pepper powder.

3. Add 1/2 tsp of minced garlic.

4. Add 1/3 tsp of light mustard.

5. Add 1/2 tsp of minced green onion.

6. Add 2 tbsp of dark soy sauce.

7. Add 1 tbsp of vinegar.

8. Add 1/2 tsp of sugar.
