A snack devoured in Chinese New Year. It’s crunchy, it’s crispy and it’s ridiculously addictive (yes, it's more addictive than chips). It’s fairly easy to make as well, you got to give it a try!

FRIED TARO BALLS RECIPE [芋蝦食譜 ]
This recipe makes 35 taro crisp balls [製成三十五件]

INGREDIENTS [食材]
1kg Taro [芋頭]
40g Glutinous Rice Flour [糯米粉]
5g 5-Spice Powder [五香粉]
1tsp Salt [鹽]
Some Sesame Seeds [芝麻]

DIRECTIONS [製作]
1. Skin taro, pat dry. Cut into really thin strips. [芋頭去皮,抹乾切成幼丝備用。]
2. Sprinkle salt and mix until combined. Set aside for 10 minutes until taro strips have softened. [灑鹽拌匀芋丝醃十分鐘至芋丝軟身。]
3. Add in 5-spice, mix, add in sesame seeds, mix, add in glutinous rice flour, mix. [加入五香粉搅拌均匀,再加上芝麻再拌勻,最後混合糯米粉撤底拌匀。]
4. Heat up oil to 150°C, dunk strainer scoop into oil to heat it up. [預熱油鑊,油温至150度,將小炸箕放入油中浸熱。]
5. Place some taro strips into strainer scoop, place the other strainer scoop on top to close it up, give the scoops a few taps, so the taro strands don’t stick to the sides, dunk it into oil. [取芋丝放入炸箕中,放另一隻炸箕在面凳數下,放入油中炸。]
6. While taro is still in the scoop, constantly shake it in the oil to loosen the taro up, so it doesn’t stick to the scoop. Once taro has hardened and taken shape, remove taro ball out of strainer (use a chopstick to help if needed). [當炸時要不時摇晃炸箕,令芋丝在炸箕中容易模,當其定型,可以脱模(如果黏壳可以用筷子輔助)]
7. Slightly increase the heat and flip the taro ball every once in a while. Fry until the taro ball has completely hardened and there are no air bubbles coming out of it. That’s the sign to take it out of the fryer, set aside to cool. Serve. [加大少許火力,同時要不時翻動,至硬身和沒有氣泡,即可取出放紙上吸油待涼即可。]
8. Traditional Method: Another way of making it is to squeeze the taro strands into a bundle to shape it like a ‘shrimp’. Frying it is the same method as above. [另外亦可取芋𢇁揸緊成蝦形,用同样方法炸熟即可。]
