The brainchild of husband-wife duo Jerald Head and Nhung Dao Head, Mắm offers an ever-changing array of Hanoi-style delicacies, which the New York Times called "the most exciting Vietnamese food in New York" in a rave two-star review. When thuy stopped by the restaurant recently, she was greeted with plates of cá cơm chiên giòn (fried anchovies), gỏi nghêu (raw surf clam salad), and tôm nướng sate (grilled prawn skewers), as well as a steaming bowl of bún hến—a comfort food staple packed with clams and vermicelli noodles.
