PIZZA DOUGH RECIPE:
500g 00 Flour
275g water
2g yeast
15g salt
15g warmed beef tallow (or EVOO)

Mix slow, bulk ferment for two hours, separate into 270g (ish) balls, ferment for another hour then ferment overnight in the fridge.
