Reverse Seared Picanha

Prep Time: 2 hrs
Cook Time: 55 mins
Cook Temp: 250F/600F

Ingredients:
Picanha
Mesquite wood chunks (use your favorite wood)
Seasonings of choice

Prep Directions:
1. Preheat smoker/grill to 250F
2. Season picanha and place in refrigerator for at least 2 hours
3. After refrigerating the picanha, allow to come to room temperature for at least 30 minutes

Cooking Directions:
1. Place picanha on smoker/grill
2. Smoke for 30 minutes (or until internal temp of 80) then flip
3. Smoke for 20 minutes (or until internal temp of 120) then remove and let rest
4. Increase heat on smoker/grill to 600F
5. Sear all sides until desired temp is reached
6. Remove from the smoker/grill, let rest for 15 mins and enjoy!
