Smoked Meatloaf
Prep Time: 4 hours
Cook Time: 3 hours
Cook Temp: 275F
Ingredients:
3 lbs. ground beef (80/20)
Mesquite wood chunks (use your favorite wood)
1 medium onion
1/2 Cup Jank BBQ sauce
1 Cup bread crumbs
2 Eggs
Favorite seasoning
Prep Directions:
1. Preheat smoker/grill to 275F
2. Sautee onions
3. Mix all ingredients in a bowl
4. Put mixture in a loaf pan and place in the refrigerator for 3-4 hours
5. Remove from refrigerator and cover with rub
Cooking Directions:
1. Place meatloaf on smoker/grill
2. Grill for 90 minutes, then check to see if it needs to be spritzed
3. Grill in 30 minute increments, then check to see if it needs to be spritzed
4. When the internal temp is 155, apply sauce
5. Continue to grill for 5-10 minutes (until internal temp is 162)
6. Remove from the smoker/grill, let rest for 15 mins and enjoy!
