🍎 Ingredients for Moules à la Grecque
• 1/4 cup / 56 ml olive oil
• 1 fennel bulb, cored and thinly sliced
• 2 shallots, thinly sliced
• 4 garlic cloves, crushed
• 1 cup / 225 ml white wine
• juice of one lemon
• 1 tsp / 5 g coriander seeds
• 1 tsp / 5 g fennel seeds
• salt and pepper
• 6 lb / 2.7 kg mussels , scrubbed and debearded

🍎 Ingredients for Moules à la Portugaise
• 1/4 cup / 56 ml olive oil
• 1/2 onion, thinly sliced
• 6 garlic cloves, thinly sliced
• 1 oz / 28 g chorizo sausage, thinly sliced
• 1 cup / 225 ml white wine
• salt and pepper
• 6 lb / 2.7 kg mussels, scrubbed and debearded
• 1 bunch cilantro, leaves only
• 4 sprigs flat parsley, finely chopped

🫕 Equipment for both recipes
• Large pot with lid
• good country bread, ( you gotta soak up the broth somehow)
