Panzanella salads really do highlight the warmer seasons with a bounty of tomatoes and veg from the garden as well as a "healthy" dose of toasty carbs. There's lots of fun ways to add to this and I would highly recommend playing around with it to your liking. Burrata & a vinegar gastrique are really nice if you wanna go that route. Ingredients:
3-4 ripe campari tomatoes
2 cucumbers
1 thick slice sourdough bread
2-3 tbsp balsamic vinegar
2-3 tbsp olive oil
garlic clove
1 tbsp Italian seasoning
2 tbsp torn parsley
2 tbsp torn basil
