Ingredients (Makes 20 mini muffins)
✔Size of one muffin (top diameter 5cm, bottom diameter 4cm x height 2cm)
(room temperature) 145g unsalted butter
(room temperature) 135g eggs
125g Granulated sugar
2g salt
150g cake flour or all purposed flour
4g baking powder
40g heavy cream (divide 20g into each batter and add 2g instant coffee for coffee flavor)
3g Vanilla bean paste
85g chocolate chips (35g each added to the batter and 10g as topping)

▶If you reduce the amount of sugar, the texture will change. Sugar is an important ingredient not only for sweetness, but also for texture, expansion, preservation, baking color, etc.
▶Bake in a preheated oven at 329℉-347℉ for 15 min (convection standard). Light waves or induction often increase the temperature. If you use a regular muffin tin rather than a mini one, bake for about 23-25 minutes.
▶Seal and store at room temperature.
