CHICKEN ADOBO is a popular Filipino dish which has rich flavors of chicken in soy sauce. There are different ways to make adobo, this is the traditional way of cooking the chicken adobo. This adobo is my kids' favorite. Hope you will like it too! So quick and easy to make. Easy recipe to satisfy your cravings! Happy Pinoy Simple Cooking!

Here is how to make FILIPINO CHICKEN ADOBO:
FILIPINO CHICKEN ADOBO RECIPE :

Ingredients:
2 lbs chicken thighs
1 head garlic, chopped
1 1/2 cup water
1/2 cup soy sauce
1/4 cup vinegar
3 dried bay leaves
2 tbsp brown sugar
1/2 tsp pepper, divided
3 tbsp oil


Directions:
1. In a small bowl combine soy sauce and garlic. Pour the mixture into the chicken. Massage well the chicken into the mixture until all chicken are coated with sauce.
2. In a pan or wok, heat oil over medium high heat. Sear the chicken until browned on all sides around 2 mins each side. Cook chicken by batch do not overcrowd the pan.
3. Add back the cooked chicken, stir in the marinade. Bring to boil for 5 mins.
4. Add water, dried bay leaves and pepper. Stir until well combined. Cover with lid and let it simmer over medium heat for 30 mins. Stir occasionally.
5. Remove the lid, add vinegar. Stir until well combined.
6. Add brown sugar, stir until sugar dissolves.
7. Continue to simmer uncovered for 10 mins or until sauce reaches your preferred consistency. Stir occasionally.
8. Serve and Enjoy! Best served with steamed rice.
